Tucked away in northern Utah, the sound of water is a constant companion at Whistling Springs Trout Farm. It’s the soundtrack to a family dream realized: a boutique rainbow trout farm that caters not just to locals, but to some of the region’s most discerning chefs.

In 2023, Adam and Paige Madden had the opportunity to lease the farm that had been out of operation for some time. Adam grew up on a cattle ranch, and the couple had been searching for a place where their children could experience farm life.
“We wanted a place for them to sweat, get some calluses, and earn an education,” Adam recalls. “Aquaculture has been a steep learning curve for us, but we were familiar with beautifying, restoring, and taking care of animals.”

For the Madden family of eleven (including nine children), raising trout at Whistling Springs is a fine-honed craft turned family affair. The Maddens manage every aspect of the farm, from hatching eggs in the pristine 55-degree mountain spring water that runs year-round to harvesting the fish by hand. Their approach focuses on sustainable practices that yield a superior product.

“We compost the guts, which will be used in our flower beds,” Adam explains. “My girls are currently growing edible flowers for restaurant service. And because the chefs get the whole fish, they will often boil the heads and so forth. There’s not much waste.”

The farm’s success lies in its chef-focused model, which started from their Instagram account. The family works directly with chefs to provide trout that meet specific size and quality requirements. This collaboration ensures that the fish arriving in kitchens is exceptionally fresh, often just hours out of the water. The result is a clean, delicate flavor.

“Chef Clement [Gelas], from Courcheval Bistro, was the first to reach out to sample our fish. We then had to quickly get our ducks in a row with the Department of Agriculture,” Adam recalls. “Chef took the fish and was nominated for a James Beard Award with that fish shortly afterward. That really showcased it, and the rest is history, as they say.”

The popularity of Whistling Springs trout goes beyond the fresh, sustainably raised fish. Restaurants and consumers love that it comes from a local, small family farm where everyone, including the kids, plays an active role. This hands-on approach sees chefs and customers appreciating the close relationships built with the farm and the care put into every step from hatchery to table.
