Chef Harris’ menus reflect the vivid culinary stories from his life. You can taste the thoughtfulness in each dish as he cooks following the principles of slow food and farm-to-table cuisine.

This recipe for Bolognese comes from Chef Harris’ grandmother who lived in a small apartment north of Bologna. It’s been handed down in her family for 100 years.

Ingredients:
2 tsp. olive oil
2 tsp. butter
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1/4 cup finely chopped carrot
10 ml dry white wine
1 oz ground beef
1/2 oz ground pork
1/2 oz ground guanciale (or pancetta if unavailable)
1 oz hot sausage (casings removed)
2 cups Denominazione di Origine Protetta tomato sauce
1/2 cup milk
1 g salt (to taste)

Serving size: 1 person

Instructions:

  1. Heat the Fat: In a large sauce pot, heat the olive oil and butter over medium heat until melted.
  2. Cook the Vegetables: Add the finely chopped onion, celery, and carrot. Sauté until the vegetables are cooked through and super soft, about 5-7 minutes.
  3. Deglaze with Wine: Pour in the dry white wine to deglaze the pot. Stir frequently and reduce the wine until almost dry.
  4. Cook the Meat: Add the ground beef, ground pork, guanciale, and hot sausage to the pot. Cook, breaking up the meat with a spoon, until all the meat is browned and cooked through, about 5-8 minutes.
  5. Add Tomato Sauce: Stir in the DOP tomato sauce. Bring to a simmer, then reduce the heat to low. Cook slowly for about 1 hour, stirring occasionally.
  6. Incorporate Milk: After 1 hour of cooking, add the milk to the sauce. Continue to cook for an additional 1-2 hours on low heat, allowing the flavors to meld together. Stir occasionally.
  7. Season: Taste the sauce and add salt as needed. Be careful not to over-salt since the meats can contribute saltiness.
  8. Serve: Enjoy your Bolognese sauce on freshly cooked pasta, and top with freshly grated Parmesan cheese if desired.
