The pandemic caused plenty of challenges, but it also opened us up to a whole new world of connection through Zoom, webinars and other virtual events. Now, Summit County Library offers talks by bestselling authors virtually, two or three times a month.

The presentations screen nationally through libraries that join the efforts of the Library Speakers Consortium. Early last year, the group contacted Summit County Library to see if it would be interested in participating in the program, which delivers a variety of authors from different backgrounds who write in genres ranging from fiction and nonfiction, including memoir and poetry.

“I was intrigued because with our programming budget, we might be able to bring in one of these authors (in person) per year, but now, patrons can watch them from the comfort of their own home,” said Library Director Dan Compton.

The last few webinars have attracted 60 to 90 local library patrons. Amor Towles’s talk on Sept. 27 about writing three international bestsellers brought in 86 people; Rick Steves’ European travel tips drew 64 people, and Ruth Ware’s mystery writing led 71 people to tune in.

“I’ve been very impressed with the caliber of these folks,” Compton said about the authors. “I’m continually impressed with the variety and diversity of the authors. (The Library Speakers Consortium) is big on inclusion.”

Thursday, Joy Harjo will talk about why she writes. Harjo is the 23rd United States Poet Laureate — the first Native American to earn this honor and only the second person overall to hold it for three terms — and this year’s winner of Yale’s Bollingen Prize for American Poetry. She’ll talk about her most recent memoir, “Catching the Light,” as well as how being a writer and poet has been so rewarding.

In her memoir, she “examines the power of words and how poetry summons us toward justice and healing,” according to a press release. “Comprised of intimate vignettes that take us through the author’s life journey as a youth in the late 1960s, a single mother and a champion of Native nations, this book offers a fresh understanding of how poetry functions as an expression of purpose, spirit, community and memory.”

On Nov. 30, Naomi Aldermen will discuss the power of women in science fiction, as well as dystopian worlds. Dec. 5, young adult fantasy fiction writer Victoria Aveyard will talk about world building, followed by a Dec. 12 presentation on motherhood, hunger and higher education with Stephanie Land.

The list continues with various authors and topics, such as upcoming discussions about retirement plans and the “lure and lies” of processed food. 

Anyone can register for the webinars, even if they do not have a library card. Within the online registration, which only asks for your name and email address, you can ask any questions you might have for the author. During the live events, authors will cover as many questions from attendees as time allows. All webinars are recorded, so you can watch them at your leisure, even if you don’t sign up ahead of time. Summit County library provides an entire page of upcoming presentations and past recordings to view under Events/Virtual Author Presentations.

So far, patron response has been extremely positive, Compton said.

“I love these programs and very much appreciate being able to participate remotely,” wrote patron Barb Bretz. “We spend part of our year out of the country, so I often tune in from Spain. I also appreciate the option of watching the recorded presentation since we are eight hours ahead of my local mountain time zone back in the USA. I especially loved the interview with John Irving. He’s been one of my favorites forever, and ‘A Prayer for Owen Meany’ is still in my top three of all time. Thanks so much for organizing and providing this wonderful opportunity. I’m thrilled my local library is part of this program.”

Since the Library Speakers Consortium offers so many diverse speakers, there’s something for everyone.

“Maybe not all of them would interest everybody, but these are authors you’ve probably heard of, and they have interesting things to share,” Compton said. “It’s free, so anyone can enjoy it.”

Summit County Library hopes to schedule live watching parties, particularly for children’s authors this summer. The library also offers at least one copy — and other books — by the authors, within its digital and physical collection.

Miso Butterscotch Apples with Sour Cream Gelato

J&G Grill’s chef, Rachel Wiener, says the inspiration for this gelato revolves around highlighting the best flavors of the late fall season.

“Really good apples come into season in Utah, and in this recipe they are paired with warm buttery flavors of butterscotch,” Wiener says. “The miso adds a unique umami flavor component, and the fresh sour cream gelato provides a classic cool, silky contrast to the warm apples with crispy kataifi topping and the toasty crunch of almonds.”

The gelato is a fairly complex recipe with multiple ingredients lists and components to prepare, but it gives you a sense of what the J&G Grill’s meticulous chefs do in the kitchen to create such amazing dishes.

To prepare it at home:

Serves 6-8 people

COMPONENTS:

• Cooked apples
• Butterscotch miso
• Toasted almonds
• Crispy kataifi
• Sour cream gelato

APPLES

• 3.3 lbs Fuji apples
• 2 1/4 c caramel powder (recipe below)
• 2 oz. L’Escure butter (or other top quality unsalted butter)

Cut apples and toss in caramel powder until evenly coated. Place apples in large, shallow pot in an even layer, and cook on the highest heat. Cook until apples are tender. Remove from heat, add butter and mix well.

CARAMEL POWDER FOR APPLES

• 4 1/3 c granulated sugar
• 1/3 tsp house ground vanilla powder
• 1/3 tsp ground Indian vanilla powder
• 1/4 tsp. Saigon cinnamon powder
• 5 tsp salt
• 1 1/3 c L’Escure butter

Place sugar in a saucepan to create a dry caramel, cooking to 190 degrees and stirring with a metal spoon. Turn off heat. Stir in cinnamon, vanillas and salt. Add butter in small portions and stir until incorporated. Pour out on a silpat and cool completely. Grind into a powder.

BUTTERSCOTCH MISO

• 1/3 c Muscovado sugar (a British specialty sugar; may substitute equal amount of dark brown sugar)
• 2 c glucose syrup (may substitute equal amount of corn syrup)
• 2/3 c L’Escure butter
• 1 1/2 tsps. cream of tartar
• 1 3/4 c heavy cream
• 1 2/3 c organic white miso

Heat Muscovado sugar and glucose syrup until sugar is dissolved. Turn off heat and add butter; incorporate well. Whisk in heavy cream and cream of tartar. Add organic white miso; mix well. Blend well with immersion blender and strain over an ice bath. Reserve at room temperature in a squeeze bottle.

TOASTED ALMONDS

Spread almonds in an even layer onto silpat-lined baking sheet. Bake at 320 degrees for 8 minutes. Cool completely and set aside.

CRISPY KATAIFI

Microwave frozen kataifi in its plastic wrapping until warm. Spread into bowl, carefully separating the strands. Fry in small portions at 350 degrees until light golden brown; drain well on towel-lined pan.

SOUR CREAM GELATO (Prepare in advance)

• 3 1/4 c organic whole milk
• 2/3 c heavy cream
• 4 2/3 oz. milk powder (such as Bob’s Red Mill brand)
• 3 3/4 c dextrose powder (available at health food and specialty grocers)
• 1 1/2 c granulated sugar
• 6 tsps. IC Stabilizer
• 8 3/4 cups sour cream

PROCESS:

Combine milk, heavy cream and milk powder and heat to 113 degrees. In a separate bowl, mix sugar and IC Stabilizer well and whisk into liquid until incorporated. Add dextrose powder and cook to 180 degrees. Strain over ice bath and immersion blend. Rest overnight.

Blend sour cream into base before churning. Churn to 12 degrees.

TO SERVE:

Heat 3⁄4 cup of prepared apples in microwave for 30 seconds. Place a generous teaspoon of butterscotch miso into bottom of serving bowl. Spoon warm apples into bowl after draining off extra liquid. Top apples with generous teaspoon of butterscotch miso. Lightly sprinkle toasted almonds around apples. Place a small mound of crispy kataifi on top of apples, just off center. Place a full scoop of sour cream gelato on top of the crispy kataifi. Serve and enjoy!

Brown Butter Panna Cotta

Deer Valley serves this mouth-watering Brown Butter Panna Cotta on its banquet menu, as well as at the Seafood Buffet and Royal Street Café. The dessert features a High West whiskey sauce. Royal Street Café offers creative American and international cuisine, while the Seafood Buffet has garnered the Zagat Restaurant Guide’s award of America’s Top Restaurants.

To prepare it at home:

CUSTARD

Serves 15 4 oz. portions

Start with mixing:

• 8 oz. butter
• 2 c heavy cream
• 1/2 T salt
• 2 c cold whole milk

Refrigerate overnight.

The next day, prepare:

• 3 gelatin sheets
• 2 1/4 c heavy cream
• 1/2 c packed brown sugar

In a very tall pot, over medium-high heat, combine butter, heavy cream, and salt. The mixture will boil up and fall back down; once this happens, stir constantly with a rubber spatula. Be sure to scrape sides and bottom well as you constantly stir for at least 10 minutes. The mixture will go through many changes, but once it separates, the butter will finally begin to brown. If you push the brown butt er to the limit, you’ll get more flavor. Once it is browned throughout, take the pot off the heat, and add a splash of cold milk. It will bubble furiously. Add a li le bit more milk and stir. Then you can finally add all of the milk, and the recipe is complete.

WHISKEY TOFFEE SAUCE

Yields 45 oz.

• 5 oz. butter, room temperature
• 1 lb. brown sugar
• 1 lb. heavy cream
• 2T salt
• 2 vanilla beans
• 8 oz. whiskey (or to tase), High West Rendezvous Rye

Melt brown sugar over medium heat. Warm heavy cream gently with scraped vanilla beans steeping. Very slowly, ladle the warmed cream into the melted brown sugar, stirring well and combing after each ladle addition. Add butter and whiskey. Cook down gently for 5 minutes, or until alcohol is mostly cooked out. Cool and strain through chinois, and pour over custard.

Pumpkin Bread Trifle

Walk into any Kneaders Bakery and Café during the winter season, and you’ll feel right at home. It’s as if you’ve stepped back in time, when life was simpler and loved ones gathered at grandma’s house for wholesome food and good company. If you’re looking for a special dessert to share with friends and family this season, you can turn a Kneaders’ mainstay into a treat that your guests will look forward to every year.

To prepare it at home:

• 2 loaves of Kneaders’ pumpkin bread
• 1 (5.1 oz) box cooked-and-serve vanilla pudding mix
• 1/2 c brown sugar, packed
• 1/3 teaspoon ground cinnamon
• 1 (12 ounce) container of frozen whipped topping, thawed
• 1/2 c chopped nuts (optional)

Prepare pudding according to package directions. Set aside and allow to cool. Stir brown sugar and cinnamon into pudding. Crumble one loaf of bread, and place in bot- tom of an 8-inch trifle bowl. Pour half of pudding mixture over bread. Spread half of the whipped topping over the pudding layer. Repeat with the remaining loaf of bread, pudding and whipped topping. Sprinkle chopped nuts on top. Refrigerate overnight.

Chocolate fondue for two

Adolph’s Restaurant has been a Park City tradition since Adolph Imboden first opened the doors in 1974. Adolph’s is best known for its warm hospitality and ample servings. Dine in a casually  elegant atmosphere with an exquisitely prepared cuisine while enjoying a few of Adolph’s specialties, like the original Swiss cheese and beef fondue or Raclette; it has one of the most fabulous selections of home-made desserts, including the best chocolate fondue in town.

To prepare it at home:

• 1 c semi-sweet chocolate chips or 2 bars of Swiss Toblerone, or any other Swiss milk choclate
• 3-4 oz, milk or cream
• 3-4 pieces of pound cake, brownies or cut fruit (apples, pears, strawberries, bananas and other berries)

Melt the chocolate on low heat with the milk in a small fondue pot to keep the melted chocolate warm, but not burnt. Dip cut up ingredients, and enjoy.

Your home or workplace may be a “green building,” but are your daily habits supporting sustainability?

Studies show that green buildings, in and of themselves, don’t necessarily motivate people to act environmentally conscious, says Bill Wilson, CEO and founder of Sustain3 in Park City.

“It is possible to have a ‘green building’ with ‘grey occupants’ who are not environmentally conscious,” according to a 2015 study by Saba Khashe and colleagues about the influence of LEED branding on building occupants’ pro-environmental behavior.

“Green features, such as individual heating controls, window shades and waste reduction policies, are only successful when homeowners and employees use them correctly,” Wilson says. “All too often, the choices of building occupants negatively influence building performance.”

For example, people might rationalize turning up the heat or not turning lights off when leaving rooms, thinking they live, or work, in a “building (that) is already (conserving) for them by nature of its energy efficient design,” Wilson says.

When an entire family — or work force — acts this way, they begin to lower their expectations around energy bills, which slowly creep higher, Wilson says. In reality, they’re simply over-consuming and offsetting energy savings an efficiently built home or office offers.

Experts refer to how homeowners use energy as “behavioral energy use.” Habits revolving around keeping lights on, electronics plugged in and on, and the heat (or air conditioning) turned up for greater comfort account for 50 percent of more of a homeowner’s energy use, according to the Environmental Protection Agency.

Basically, experts are pointing out that: You can build it, but if they come and aren’t aware of environmentally friendly practices when it comes to energy use, it doesn’t matter how well it’s built; the actions of occupants impact energy efficiency.

“There is a significant opportunity to save energy and other resources through programs targeted at modifying occupant behavior,” Wilson says.

Some researchers, like Khashe, assert that if people changed their behavior regarding energy efficiency, it could lead to overall energy savings of 40 percent or more. Others claim the change falls in the 5 percent to 30 percent range. Nevertheless, being conscious of when you could be wasting energy versus saving it makes a difference.

Wilson points out seven ways people can make a difference in their energy consumption:

1. Become more aware.  To change habits, you need to be aware that there are things you can do differently. This article is your wake-up call.
2. Manage your comfort. Wear appropriate clothes for the season instead of relying on your building to do all the work of heating and cooling you.
3. Manage your power.Activate the power management settings on your computer and monitor.
4. Unplug chargers and other electronics when not in use.
5. Take advantage of sunlight. Rely on natural light to brighten your home or office instead of overhead lighting.
6. Think before you print. Print only when you absolutely need to, and always print double-sided.
7. Power down. Shut down your computer and monitor at the end of each workday.

It might seem like a little step to unplug a charger or put on an extra layer as the temperatures cool, but small steps lead to tangible results.

When Gray Smith moved to Park City in 1973, he scraped together just enough money to pay for a month’s rent at The Palace Flophouse, located where Park City Mountain’s parking lot now sits. For a $1 a night, miners, Vietnam War vets, hippies and ski bums snagged a bed in one of six large bunk rooms, which slept up to a dozen people. From that humble $30 foundation, Smith carved out a life in Park City, which revolves around skiing, and a business he founded: Berry Creek Mountain Home Furnishings.

One of Berry Creek’s specialties includes high-end, solid wood, artistically crafted bunk beds. Yes, his beds are a far cry from the Flophouse’s, but he still fondly recalls his days in the dorm. He believes every mountain home deserves a bunk room — and the memories they provide.

“The bunk room has always been a part of the culture of ski towns,” Smith says. “It’s just part of the lifestyle, whether it’s a second home or a rental. It just accommodates every type of different need. It’s a staple.”

Bunk bedrooms form lasting memories for kids vacationing with parents and grandparents, whether families are renting, or own a second home in Park City.

Bunks become kids’ special places to “hide out,” play games and stay up late, listening to their iPods, which they can tuck away in “secret” hiding spots cleverly built in to side covers near mattresses. Some high-tech bunks even include television screens, which pop up from the foot of the bed.

Built-in bunk systems provide sophisticated aesthetics, but architects usually plan them when designing or remodeling a custom home; they’re meant for retrofitting.

On freestanding bunk beds, cool curtains prompt kids to build their own “forts,” and fabric or wood trim under the beds allow kids to gaze up at something more interesting than just the bottom of a bunk bed. Other accents, like LED lights installed around the perimeter of beds, emit a soft, and fun, glow.

“Every bunk bed should be a kid-friendly room — unless it’s a rental — with a fun bunk system, and bean bags, a game table and a desk,” says Mario Ferreira, vice president of business development at Barclay Butera Inc. “Kids love the space. It’s a space for them to hang out, where they bring their friends.”

While most people associate bunk rooms with kids, adults love bunk rooms too; couples or groups of guys or gals will rent a condo or home and bunk up to save a little cash, or simply fit everyone into one place.

“It’s really about the functionality. It’s a room that provides a lot of utilitarian use for ski towns,” Smith says.

As a result, he and many other companies construct larger, solid bunks to accommodate adults. And, they’re not just two stacked twin beds. His configurations include formats like a queen-sized bed, complete with headboard and footboard, with a canopy consisting of two twin beds above. These designs allow families to bunk together, or various groups to sleep comfortably.

Bunk style

Craftsmen construct quality bunk beds out of wood, metal or a combination of both. Smith uses alder ecologically harvested from the Pacific Northwest, reclaimed wood or dead-standing wood.

When homeowners choose wood, many want the clean, contemporary lines of refined wood. Others prefer slight distressing, for a touch of rustic, or even log beds, to foster a full mountain lodge feel.

“Wire brushing the wood is very popular,” Smith says. “It opens up the grain of the wood, (so) it takes a little more color where it’s grooved out.”

Gray and espresso are currently trending when it comes to the color of wood finishes, he says. Still, when it comes to bunk rooms, all kinds of possibilities exist; there’s no “one size fits all.”

“Bunk beds are very specific to the buyers,” Ferreira says.

Built-in bunks neatly fit room specifications. Sometimes, architects design a few large cubbyholes in a wall or two — rather than actually build in full bunk beds, they simply “float” as finished rectangles to accommodate one twin bed each. These “holes” in the wall can transform into caves or mines with the right designer.

“It’s all about the design and about how creative the client allows you to be,” Ferreira says.

He styled an entirely white room with all white walls, floors and bunk beds, which blended in perfectly.

“It becomes very personal,” Ferreira says. “Bunk beds have so many different purposes … they can be very contemporary with metal or wood; wood brings some warmth, where metal can be cool. Metal gives it that contemporary, or industrial, look.”

Bunk rooms not only stir nostalgic memories for adults or create lifetime memories for kids, but also offer a chance for imagination to soar. Bunk beds become capsules of creativity when designed properly.

“I wish I had an experience like that when I was a kid,” Ferreira says.

He missed out on The Palace Flophouse, but through his innovative bunk room projects, he generates a space where vacationing adults can feel like kids again, and kids can just be kids, playing in their bunk room until the sleepy-eyed night nudges them into dreamland.

ART SPIRIT

Fine art comes naturally to William J. Kranstover, and perhaps that’s exactly what is so compelling about his work. He says “‘Art Spirit’ has been know to him all of his life.” He began painting early on and pursued his art education at the University of Wisconsin. Since then, he has taught art in Australia, and continues to practice his craft today, in Utah.

His current, colorful works spark the imagination. His versatility ensures that every new series remains fresh and engaging. His work stands out because of his personal investment in his processes and his continual commitment to always learn more.

Parkites have know Bill for years as a sculptor, teacher and in-kind contributor to the town’s growing art scene. He has earned the prestigious Meritorious Service award for art in his community, as well as garnered numerous awards for his paintings and sculptures at the Springville Museum of Art. He has participated in one-man shows, as well as group shows at the Kimball Art Center in Park City, among other galleries in the community.

He spends his days painting in his studio, which is a converted old general store, nestled on Highway 32 in Peoa, Utah.

“(Here, I) find the perspective and respite I need to disconnect from the world and continue to engage in my process,” he says. “It is a continued joy and lifelong dream to simply paint every day.”

BEADED BODY

Stacy A. Phillips has been a full-time studio artist since 2001, but she has created art her entire life. After selling her gallery in Park City in 1993, she pursued her life as a “maker.” She works in several different mediums, choosing whatever materials she feels are the best vehicles to express her ideas. Her series of beaded torsos began in 2003, during graduate school.

“I have found that my process stems from the ‘What If?’” she says. “Having a background in jewelry, then exploring ceramic sculpture, I thought, ‘What if I combine the two and create adorned figures?’ I am inspired by curiosity of materials and the process of making art.”

She originally sculpted “Althea” in clay, and then cast it in bronze, allowing her to create different patinas, which are suitable for the beads she forages from her travels. The Peruvian opals on the skirt inspired “Althea,” as blue Peruvian opals are known as a stone of courage and ingenuity.

“The process of finding the beads and discovering what colors and textures work best for each piece is endless inspiration for me,” she says. “My goal as an artist is to keep seeking the ‘What if.’ Whether it be the process or the concept that the question stems from, hopefully the two shall meet. This curiosity is what keeps me showing up in my studio every day.”
