Park City lunch crowds have a reason to smile. A new option for a quick and healthy bite opened its doors two weeks ago; Nature’s Wraps is bringing guilt-free, convenient food to town, said owner Max Doilney. Before the dust even settles inside, Nature’s Wraps regulars are making it their spot of choice.
“There was a void of quick, healthy options,” Doilney said, “and Nature’s Wraps has a lot of the qualities of quick service,” Doilney said, “but it does it with a lot of integrity in the food.”
That’s where he said Nature’s Wraps steps in. From quinoa to lentils to tofu, his on-the-go restaurant is all about making a healthy lunch easier for Park City.
Nature’s Wraps is all about fresh, simple wraps made to order. The restaurant offers about 80 percent fresh product and about 20 percent cooked items such as meats. Combinations are endless.
The healthy base was just where Doilney began, and despite a plethora of options for those looking for something diet-friendly, he feels the menu has something on it for anyone.
“You can order all rice and beans, cheese, steak, chicken,” Doilney said. “You could have all that just as easy as you could have the tofu, roasted vegetables and salad. It’s all about the options.”
Doilney said the reason he felt the area needed something like his store came from watching his wife and her friends always order from the same handful of menu items at every restaurant.
“I watched what my wife and her friends ate and I realized they struggle to get a good meal everywhere they go,” Doilney said. “They are what I based the menu around, the types of foods they eat.”
“People might not eat well because they don’t always have the option,” he added. “We’re providing that option.”
Doilney is a Park City local, graduating from Rowland Hall and later opening The Corner Store on Lowell Avenue . So when it came time to examine a new business venture, keeping it close to home felt like the natural choice.
“Park City was the perfect place to open this business,” Doiley said. “It’s the perfect place to test a concept like this.”
And Nature’s Wraps is something he thinks has potential to expand, to the point of studying other chains to get a feel for what works and what does not.
“If people like it, I may open more,” he said. “Ideally, this could be a chain where every location felt as though it was the only one. It could very well be a chain.”
“You have to have one successful restaurant to have two,” he added. ” but I’m taking suggestions on where another location could work.”
That’s why Doilney is looking at the business from every angle that will help it get off the ground and running full speed. He plans on keeping the local-friendly vibe in the store but also wants to cater to places like theaters and coffee shops.
He has already adapted portions of the menu to customer feedback, changing the roasted vegetables four times and the broccoli prep three times since opening.
The actual ingredients come from a large distributor, similar to Park City’s grocery stores as a way to keep costs down for the clientele, but Doilney said he always has one eye on quality watching everything that comes through the door.
“We keep it really affordable,” he said. “We’re not trying to dive into an all-organic food market where we have to go and shop at every farm in the state to find our product. That isn’t feasible for a business to grow.”
